Chop 200g streaky bacon into approx. 5mm pieces.
Peel 6 garlic cloves, two onions, and three celery sticks - trim ends off the carrots.
Chop the carrots, onions and celery into rough 5mm pieces or process in food processor - pulsing the carrots and then adding onions and celery, pulse again.
Add a couple tablespoons of oil to the large frying pan over a medium heat.
Add the chopped bacon and fry until the bacon starts to colour.
Then add the carrots, onions, and celery to the pan.
Using a garlic crusher, crush the garlic directly into the pan.
Sauté the vegetables with the bacon until slightly softened.
Then pour in 300ml red wine and cook until the wine has evaporated.
Transfer everything to the pasta pot.
